  • 2 chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet over medium heat, heat olive oil and add cubed chicken with Cajun seasoning. Cook until browned (5–7 minutes).
  4. Add diced onion, red bell pepper, and minced garlic to the skillet; sauté until softened (3–4 minutes).
  5. Stir in softened cream cheese until melted; add heavy cream and chicken broth until smooth.
  6. Mix in shredded cheddar, Parmesan cheese, salt, and pepper until fully combined.
  7. Add cooked chicken back into the skillet along with drained pasta; mix well.
  8. Pour mixture into a greased 9×13-inch baking dish and spread evenly.
  9. Bake for 20–25 minutes until bubbly and golden on top.
  10. Garnish with chopped parsley if desired before serving hot.
