  • 2 boneless, skinless chicken breasts
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese (for garnish)

Instructions

  1. Boil salted water and cook pasta until al dente. Drain and set aside.
  2. Season chicken with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook chicken for 5-7 minutes on each side until golden brown. Let rest before slicing.
  4. Mix diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, and salt in a bowl.
  5. Toss cooked pasta in the skillet with leftover drippings from the chicken. Slice the rested chicken and top with bruschetta mixture.
  6. Garnish with Parmesan cheese and extra basil leaves if desired.
