  • ¾ cup peach preserves
  • 2 tablespoons olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about pounds)
  • 2 medium peaches

Instructions

  1. In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, pepper, and red pepper flakes. Reserve half for later.
  2. Marinate salmon fillets in the remaining marinade for at least 30 minutes in the refrigerator.
  3. Preheat oven to 375°F (190°C).
  4. Sear marinated salmon skin side up in an oven-safe skillet over medium-high heat for about 2-3 minutes until golden brown.
  5. Flip salmon skin side down and add peach slices around it.
  6. Pour reserved marinade over the salmon and peaches.
  7. Bake for 12-15 minutes until the salmon reaches an internal temperature of 145°F (63°C).
  8. Garnish with fresh parsley if desired and serve immediately.
