Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown on both sides (about 5-7 minutes each). Remove and set aside.
  2. In another saucepan, bring the chicken broth to a boil, add the rice, reduce heat, cover, and simmer for 15-20 minutes until tender.
  3. In the same skillet used for the chicken, melt butter over medium heat. Whisk in flour to form a roux. Gradually stir in milk and remaining broth until smooth; then mix in garlic powder, thyme, cheddar cheese, and Parmesan.
  4. Return the chicken to the skillet with the sauce and spoon sauce over it. Serve over fluffy rice.
