  • 2 Tablespoons Olive Oil
  • 4 Yellow Onions, sliced thin
  • 2 Pounds Yukon Gold Potatoes, washed
  • 4 Tablespoons Salted Butter or non-dairy butter
  • 3/4 Cup Half & Half or Full-Fat Coconut Milk or Dairy-Free Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese, freshly grated
  • 1 Bunch Chives, thinly chopped
  • 2 Sprigs Fresh Thyme
  • 3 Leaves Fresh Sage, chopped

Instructions

  1. Prepare the onions by peeling and thinly slicing them.
  2. In a skillet over medium heat, add olive oil and sliced onions. Cook for 40-50 minutes, stirring occasionally until golden brown and caramelized.
  3. Meanwhile, wash and chop Yukon Gold potatoes into small pieces. Boil in salted water for about 20 minutes until fork-tender.
  4. Drain the cooked potatoes and mash in a large bowl. Add butter, half & half (or dairy-free alternative), and kosher salt, mixing until smooth.
  5. Stir in half of the caramelized onions and Parmesan cheese until well combined.
  6. Serve the mashed potatoes topped with remaining caramelized onions and sprinkle with chopped chives, thyme, and sage.
