  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cup chocolate chips (divided)

Instructions

  1. Preheat your oven to 350F.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, mix cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until well combined. Stir in one cup of chocolate chips.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Spray an 8" x 4" loaf pan with oil and pour in the batter. Sprinkle remaining chocolate chips on top.
  6. Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
