  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C. Toss butternut squash cubes with olive oil, salt, and pepper on a parchment-lined baking sheet. Roast for about 20 minutes.
  2. In another bowl, toss Brussels sprouts with olive oil, salt, and pepper. Add them to the oven for the last 15 minutes of roasting.
  3. Cook bow tie pasta according to package directions in salted water; reserve some pasta water before draining.
  4. In a skillet over medium heat, brown sliced turkey sausage until crispy.
  5. Add minced garlic to the skillet; cook until fragrant. Stir in butter until melted.
  6. Combine pasta with the garlic butter sauce; add roasted vegetables and fresh thyme.
