  • 12 thick-cut slices of brioche bread or 12 brioche rolls
  • 1 3/4 lb apples (approximately 5 apples), peeled and diced
  • 4 tbsp salted butter
  • 3/4 cup brown sugar
  • 1 cup milk of choice
  • 1 cup heavy cream
  • 4 eggs, at room temperature
  • Optional: turbinado sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a medium saucepan over medium heat, melt butter and stir in flour and apple pie spice. Add brown sugar, diced apples, and water; cover and cook until apples soften (10-15 minutes).
  3. Strain excess juices from the apple mixture into a bowl (reserve for serving).
  4. In another saucepan over medium-low heat, combine milk, heavy cream, granulated sugar, salt, vanilla extract, cinnamon, and optional apple pie spice. Whisk until combined; remove from heat and gradually whisk in eggs.
  5. Cut brioche into one-inch cubes and layer one-third in the prepared pan. Top with one-third of the apple filling; repeat two more times.
  6. Pour custard mixture evenly over the layered bread and press down gently to soak.
  7. Bake for about 35-40 minutes until golden on top but slightly wobbly when shaken. Cool for about ten minutes before serving.
