  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel and slice the apples thinly. In a pot over medium heat, combine apples with sugar, salt, and cornstarch; cook until softened.
  3. In a bowl, whisk together egg yolks, cornstarch, milk, sugar, salt, and vanilla until smooth. Cook on low heat until thickened into custard.
  4. In a baking dish, layer half the apple mixture followed by some custard; repeat layers.
  5. Bake for about 80 minutes until golden brown on top. Let cool slightly before serving.
