  • ¼ cup packed light brown sugar
  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon (optional)
  • 4 Tablespoons unsalted butter (melted)
  • 2 cups all purpose flour
  • 1 Tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a muffin tin with paper liners.
  2. In a bowl, mix together crumble ingredients until clumps form; set aside.
  3. In another bowl, whisk flour, baking powder, salt, and cinnamon for the muffin batter.
  4. In a large bowl, cream together sugars and butter until fluffy; add eggs, sour cream/yogurt, and vanilla extract.
  5. Gradually mix in half of the dry ingredients followed by milk and then the remaining dry ingredients until just combined.
  6. Fold in diced apples gently.
  7. Fill muffin cups about three-quarters full and top with crumble mixture.
  8. Bake for about 20 minutes or until a toothpick comes out clean.
  9. Let cool slightly before transferring to wire racks.
