  • 8 g light brown soft sugar
  • 17 g plain flour
  • 1/8 tsp cinnamon
  • 175 g unsalted butter (softened)
  • 175 g light brown soft sugar
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by peeling and chopping apples. Cook them in a pan with sugar, cornflour, and spices until soft. Cool completely.
  2. For the crumble topping, mix flour, sugar, and cinnamon; rub in butter until crumbly. Bake until golden.
  3. Make the cupcake batter by creaming butter and sugar; add eggs one at a time followed by dry ingredients.
  4. Bake cupcakes until golden; let cool completely before filling with apple mixture.
  5. Prepare buttercream frosting by mixing softened butter, icing sugar, cinnamon, and milk until smooth. Frost cupcakes and top with remaining apple filling and crumble.
