  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled, cored, sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs (room temperature)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 75 g granulated sugar

Instructions

  1. Prepare the crust by crushing biscoff cookies and mixing with melted butter. Press into the bottom of a springform pan.
  2. For the streusel topping, combine melted butter with flour, brown sugar, and rolled oats until crumbly.
  3. Toss sliced apples with brown sugar and cinnamon in a bowl.
  4. Beat cream cheese and sugar until smooth; add Greek yogurt, spices, and eggs gradually.
  5. Layer half of the cheesecake batter over the crust, followed by half of the apple mixture. Repeat layers ending with streusel on top.
  6. Bake in a preheated oven at 160°C (320°F) for about 85 minutes until set but slightly jiggly.
  7. Allow to cool before refrigerating for at least four hours before serving.
