  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat oven to 350°F (180°C). Prepare a springform pan by wrapping it in foil and greasing it with non-stick spray.
  2. For the crust, mix graham crumbs, brown sugar, and cinnamon; add melted butter and press into the pan.
  3. Sauté sliced apples with brown sugar and cinnamon until soft; layer over the crust.
  4. Combine cream cheese, sugars, cornstarch, vanilla, sour cream, and eggs until smooth; pour half over the apples. Repeat layering.
  5. Bake in a water bath for about 55 minutes until set but slightly wobbly in the center. Cool gradually before refrigerating overnight.
