  • 1 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup apple cider, reduced to ¼ cup
  • ½ cup whole milk
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup store-bought caramel sauce (or homemade if you prefer)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Prepare the apple cider by simmering it in a saucepan until it reduces to about ¼ cup.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
  3. Cream the softened butter and brown sugar until fluffy. Add the egg and vanilla extract followed by the reduced apple cider.
  4. Gradually mix in dry ingredients until just combined.
  5. Scoop tablespoon-sized dollops onto lined baking sheets and bake at 350°F (175°C) for about 10 minutes.
  6. For the caramel filling, beat together softened butter and powdered sugar with whole milk and reduced apple cider until smooth.
  7. Once cooled, fill half of the cookies with caramel and top with another cookie.
