  • 1/2 cup chopped figs
  • 1/2 cup crumbled goat cheese or dairy-free alternative
  • 1 cup pecan halves
  • 2 Tbsp maple syrup for roasting pecans
  • 1/2 cup olive oil
  • 2 tsp maple syrup for dressing
  • 1 tsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp pepper
  • 1 garlic clove, minced
  • 3 Tbsp balsamic vinegar
  • 1/41/2 tsp sea salt or to taste

Instructions

  1. Preheat the oven to 350°F. Toss pecans with maple syrup and a pinch of sea salt; roast on a parchment-lined baking sheet for about 5-7 minutes until toasted.
  2. In a bowl, whisk together dressing ingredients: olive oil, maple syrup, lemon juice, Dijon mustard, minced garlic, balsamic vinegar, pepper, and sea salt.
